Wild Blueberry Banana Bread
This wild blueberry banana bread is a wonderful variation of the traditional banana bread. It has the added nutrition of 1 1/2 cups of wild Maine blueberries, and it’s moist and delicious!
Preheat the oven to 350 degrees.
Lightly grease with butter a loaf pan (9x5x3) and lightly flour
Ingredients
1 1/2 cups all-purpose flour (I prefer King Arthur’s unbleached)
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup brown sugar
1/2 cup oil (I prefer olive oil)
2 large eggs, beaten
2 teaspoons vanilla extract
2 ripe banas, peeled and mashed
1 1/2 cups fresh or frozen wild Maine blueberries (lightly floured)
Directions
In a medium bowl sift together the flour, baking soda, salt, baking powder, cinnamon and nutmeg.
In a large bowl beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas.
Add the dry ingredients and stir until blended.
Fold in floured blueberries.
Pour batter into prepared loaf pan. Bake 1 hour or until toothpick inserted in center removes clean.
Cool in pan for 15 minutes.
Remove from pan and cool on wire rack.
Eat warm or completely cooled. Delicious!
