Blueberry Betty

We aren’t sure who Betty is, but we love this cobbler-type recipe. We found it on www.cooks.com and made some adjustments of our own. Prep time for this delicious dessert is a snap!

In an 8 or 9 inch square baking dish add:

  • 4 cups blueberries
  • Sprinkle with 2 Tbsp lemon juice

In a separate bowl combine:

  • 2/3 c. brown sugar
  • 1/2 c. flour (I often use white wheat flour)
  • 1 c. quick oats
  • 1/3 c. melted butter
  • 1 tsp. cinnamon
  • 1/4 tsp. salt

Spread on top of berries.

Bake at 375° until slightly bubbly, 25-30 minutes for fresh, 30-35 minutes for frozen.

Serve warm with vanilla ice cream or freshly whipped cream for even more flavor.

Note: Recipe can be doubled for a 9 x 13 pan.
